Apple and oat pancakes

Serves - 2

Great fibre, prebiotics and gut healthy apple pectin in these delicious pancakes.

Serve with gut healing spiced apple sauce and or a drizzle of maple syrup. Nutrition calculated without topping. Maple syrup adds 13g carbs per tablespoon.

Ingredients

  • 100 g grated apple

  • 100 g grated courgette

  • 2 eggs

  • 2 T oats

  • 2 T ground almonds

  • 200 ml milk of your choice (optional)

  • 1 T psyllium husk (optional)

  • 2 t cinnamon

  • butter (for frying)


Method

  1. Wash and grate apple and courgette with skin on into a bowl.

  2. Crack and add 2 eggs to the bowl.

  3. Add oats, psyllium husk, cinnamon and whisk.

  4. Melt a knob of butter in a pan.

  5. Spoon 2 tablespoons of pancake mix into the pan and press into a pancake shape - small pancakes are easier to manage.

  6. Once golden around edges, flip pancake and cook the other side.

  7. Serve pancakes with a small drizzle of maple syrup or healthy topping of your choice.
