Banana & walnut bread

Serves - 8

Bananas are a healthy source of fibre, potassium, vitamin B6 and vitamin C. They are a high carb fruit so best eaten in moderation.

Have a slice of this with a hot cup of cocoa. Simply heat some coconut milk, then stir in a teaspoon or two of cocoa powder. Add vanilla stevia if you need a sweeter taste. And guess what... Cocoa is a prebiotic! ;)

Those microbes have pretty good taste.

Ingredients

  • 1 very ripe banana

  • 3 eggs (separated)

  • 150g ground almonds

  • 50g butter (melted)

  • 1 T bio yoghurt (non dairy)

  • 2 T erythritol

  • 1/2 t allspice

  • 1/2 t cocoa powder

  • 1/2 t vanilla extract

  • 1 t baking powder

  • 50g toasted walnuts


Method

  1. Preheat oven to 180ºC / 350 F.

  2. Mash banana with a fork.

  3. Mix banana with melted butter, egg yolks and yoghurt.

  4. Add spices, baking powder, ground almonds and mix till well combined.

  5. Whip eggs whites with erythritol.

  6. Fold egg white with banana mixture and chopped walnuts.

  7. Bake in a parchment lined loaf tin for 25 mins or till golden and a wooden stick comes out clean.
