Beet & carrot soup

Serves - 4

This is a great soup to warm and increase bloodflow, great if you are feeling a bit run down and weak.

Beetroot is amazing for the blood. They also contain fibre, vitamin B9, manganese, potassium, iron, and vitamin C. Carrots are great for eye health and hormone balance. The orange colour is beta carotene which converts into vitamin A. They also contain biotin, potassium, and vitamins K1 and B6. K1 coagulates the blood and improves bone health.

Ingredients

  • 300 g beetroots

  • 200 g carrots

  • 20 g celery stalks

  • 10 g parsley stalks

  • 1 onion

  • 20 g butter

  • 1.5 lt filtered water

  • 1 t garam masala

  • 1 t chilli flakes

  • 2 T coconut cream (optional)

  • dash of Worcestershire sauce

  • salt & pepper


Method

  1. Dice onion and celery and add to a large pan with a knob of butter and chopped parsley stalks.

  2. Sweat down for 10 mins.

  3. Wash and chop carrot and beets with skin on.

  4. Add to the pan and cook for 20 mins.

  5. Add water and simmer on low till the veg is tender.

  6. Blend using a stick blender, leaving some chunks.

  7. Stir in coconut cream, spices, salt & pepper and serve.
