Chicken leg bone broth

When you buy cuts of chicken still on the bone, you end up with leftovers you can turn into amazing nutritious broth you can use as a base for soup or have on its own by adding some herbs and spices. Ginger and chilli are great for ramping up your metabolism.

Ingredients

  • 1 roast chicken leg bone (leftovers)

  • 3 peppercorns

  • 1 bay leaf

  • 2 garlic cloves (chopped)

  • 1.5 lt filtered water

  • Optional extras:

    • ginger

    • lemongrass

    • chilli


Method

  1. Throw everything into a saucepan.

  2. Simmer on low for 1 hour.

  3. Drain and serve in a mug (250 ml).

  4. Store remaining in a jar in the fridge or freezer.

  5. Salt to taste and add any extras like sliced ginger.
