Chicken soup

Chicken soup is incredibly healing.
Collagen and gelatine in chicken soup is healing for the gut lining. It also contains the amino acid cysteine which thins mucus has and has an anti-inflammatory effect on the body.

Ingredients
roast chicken carcass with leg meat
water to cover
1 garlic clove
1 onion
2 celery stalks
2 T fresh thyme
1 bay leaf
1 T butter
2 leaves spring greens or cabbage (shredded)
chicken jus (whatever is left)
salt & pepper
Method
Add chicken carcass to a large pan.
Cover with filtered water.
Simmer for 2 hours on low, then allow to cool.
Once carcass has cooled, remove carcass and shred all meat from the bones and set aside.
In another pan, sweat onion, celery and thyme in coconut oil.
Pour chicken stock over onion and celery, and simmer on low for 30 mins to an hour.
When soup flavour is good, add chicken meat and shredded cabbage, simmer for 10 more minutes then serve.
