Goji, fig & pecan granola

I wanted to create a sugar-free, whole grain breakfast cereal. Most cereal you can buy are extremely unhealthy as they are loaded with sugar and highly processed grains.
When looking for carbohydrates that didn’t create an inflammatory response in my legs, I found oats. Oats are an incredibly nutritious whole grain. Packed full of fibre, vitamins and minerals.
Figs are rich in minerals potassium, calcium, magnesium, iron and copper, vitamins A and K and soluble fibre.
Goji berries are considered a superfood and have been used in eastern medicine for hundreds of years to increase blood health, eye health, liver, kidney and lung functions.
Top tip: Always brush your teeth after eating dried fruit.

Ingredients
200 g oats
100 g butter
50 g dried figs
50 g goji berries
50 g pecan nuts
50 g almonds
2 T maple syrup
1 t cinnamon
1 t allspice
Method
Preheat the oven to 180ºC / 350 F.
Melt butter in a pan.
Add oats and goji berries to a large mixing bowl.
Roughly chop and add nuts.
Chop figs as finely as you can and add to the melting butter with the maple syrup.
Once butter is melted add to the oat mixture and mix well.
Scoop mixture into a baking tin.
Bake for 20 mins.
Stir mix and bake for a further 10 mins.
Remove from oven and allow to cool before transferring to a glass storage jar.
Serve drenched in your favourite non dairy milk - almond milk is lovely.
