Green shakshuka

Start the day with a warming medley of green veggies and egg. You could add any green veg you like really and more herbs and spices. Shakshuka is a North African breakfast dish that literally means a mixture.

Ingredients
1 onion
1 courgette
2 celery stalks
200 g spinach (fresh or frozen)
6 asparagus spears
1 t nutmeg
1 avocado
sprig of parsley
2 eggs
Method
Preheat oven to 180ºC / 350 F.
Dice onion, courgette and celery stalk and cook in a pan till coloured.
Add spinach and cook till wilted. If using frozen, squeeze out any excess water first.
Add nutmeg salt and pepper.
Cut the tops off the asparagus and dice the stalks. Mix the diced stalks into the veg mixture reserving the tops for decoration.
Divide veg mix between 2 small ovenproof dishes.
Dice avocado and add to the dish with the aspapgus tops.
Create a well and crack an egg into each dish
Bake for 15 mins or until egg is cooked.
Serve sprinkled with chopped parsley, salt pepper and chilli flakes.
