Pesto courgetti

Courgette makes a great low carb pasta replacement. It’s not exactly the same but it’s a wonderful high fibre alternative that won’t give you that sluggish feeling afterwards.

Pesto keeps it all really fresh. Make your own pesto with garlic, basil, pine nuts, parmesan and extra virgin olive oil, or use a good quality shop bought one.

So quick to make. Super fresh herby and garlicky dish.

Ingredients

  • 2 courgettes

  • 1 T olive oil

  • 6-10 cherry tomatoes

  • 1 t chilli flakes


Method

  1. Top and tail courgette and use a spiraliser or vegetable peeler and knife to create noodles.

  2. Add spiralised courgette to the pan and sweat down with olive oil till softened.

  3. Add pesto and mix through.

  4. Serve with cherry tomatoes, chilli flakes, sea salt and pepper.
