Potato & courgette rösti

Serves - 3 (2 röstis per serving)

Potatoes are delicious, but they are very high carb (17g carbs per 100g potato).

By adding courgette to this potato dish, we are adding more fibre, which will bring the net carb value down and keep your blood sugar more stable.

Ingredients

  • 1 potato (200 g)

  • 1 courgette (200 g)

  • 1 egg

  • 1 T coconut flour

  • 1 t nutmeg

  • salt & pepper

  • butter for frying (20g )


Method

  1. Preheat oven to 180ºC / 350 F.

  2. Grate potato and courgette.

  3. Squeeze out any liquid.

  4. Mix with egg, coconut flour, nutmeg salt & pepper.

  5. Melt a knob of butter in a pan.

  6. Scoop the rösti mix into 6 pancakes on a hot pan and cook till the edges are golden.

  7. Flip röstis and cook the other side.

  8. Transfer to an oven tray, dot a little butter on each one and oven bake for 15 mins, till cooked through and golden.

  9. Store any remaining röstis in the fridge or freezer for reheating in the oven later in the week.
