Avocado and smoked salmon courgette blinis

Ingredients

  • 100 g courgette

  • 100 g celery

  • 2 egg

  • 1 T psyllium husk

  • 1 t dill (chopped)

  • 1/2 t nutmeg

  • 1 lemon (zest)

  • 1 T paleo mayo

  • 4 smoked salmon slices

  • 2 avocado

  • 1 T extra virgin olive oil

  • salt & pepper


Method

  1. Crack egg into a bowl and whisk.

  2. Grate courgette and celery.

  3. Add to a bowl with husk, dill and nutmeg and mix.

  4. Melt some butter in a frying pan.

  5. Scoop in the blini mix, 2 tablespoons per blini (keep them small as they are fragile.

  6. Flip carefully once brown on one side.

  7. Serve 2 blinis per serving on a plate.

  8. Cover each blini with a smear of mayo, a slice of smoked salmon and sliced avocado.

  9. Drizzle with olive oil, salt and pepper.
