Avocado and smoked salmon courgette blinis

Bursting with fibre, protein and healthy fats! This make a lovely breakfast or dinner party starter.

Ingredients
100 g courgette
100 g celery
2 egg
1 T psyllium husk
1 t dill (chopped)
1/2 t nutmeg
1 lemon (zest)
1 T paleo mayo
4 smoked salmon slices
2 avocado
1 T extra virgin olive oil
salt & pepper
Method
Crack egg into a bowl and whisk.
Grate courgette and celery.
Add to a bowl with husk, dill and nutmeg and mix.
Melt some butter in a frying pan.
Scoop in the blini mix, 2 tablespoons per blini (keep them small as they are fragile.
Flip carefully once brown on one side.
Serve 2 blinis per serving on a plate.
Cover each blini with a smear of mayo, a slice of smoked salmon and sliced avocado.
Drizzle with olive oil, salt and pepper.
