Chicken tikka

Chicken tikka skewers, great served with egg fried cauliflower rice.

Why not fire up the BBQ and have these outside.

Ingredients

  • 2 chicken breasts

  • 2 T bio yoghurt

  • 2 t smoked paprika

  • 2 t garam masala

  • 1/2 t chilli powder

  • 200 ml coconut bio yoghurt

  • 1 bunch coriander leaves

  • 20 mint leaves

  • 2 cloves garlic

  • 1 green chilli

  • 1 lime (zest and juice)


Method

  1. Mix spices with yoghurt.

  2. Cut chicken breast into cubes and marinate in spiced yoghurt.

  3. Grate and juice lime.

  4. Chop coriander, chilli, mint garlic, and add to food processor.

  5. Blend with lime and yoghurt and transfer to a dipping bowl.

  6. Add chicken to 4 wooden skewers.

  7. Cook on a hot griddle pan for 15-20 mins.

  8. Serve with egg fried cauliflower rice.
