Roast cauliflower rice

Serves - 4

For the cauliflower rice, you are welcome to mix it with brown rice. See how you feel and if you want the extra carbs or not. You can also half the recipe as it makes quite a lot, depending on the size of your cauliflower.

I encourage you to try this even if you don't like cauliflower. I wasn't the biggest fan of it, but think this is quite delicious roasted with herbs and spices.

Ingredients

  • 1 cauliflower

  • 1 T coconut oil

  • 2 t cumin

  • 1 t coriander

  • 2 T sesame seeds

  • 2 T chopped coriander or parsley

  • drizzle of olive oil

  • salt & pepper


Method

  1. Preheat oven to 180ºC / 350 F.

  2. Blend cauliflower in a food processor and tip into a large mixing bowl.

  3. Melt coconut oil and add to cauliflower with spices and mix well.

  4. Spread on a baking sheet or two and roast for 30 mins, till slightly toasted.

  5. Remove cauliflower rice from the oven and stir. Sprinkle on sesame seeds and roast for a further 15 mins

  6. Finely chop herbs.

  7. Mix cooked cauliflower rice with a drizzle of oil, herbs, salt and pepper.
