Egg fried cauliflower rice

A great low carb alternative to egg fried rice. So easy and delicious.

Ingredients

  • 1 whole cauliflower

  • 1 T coconut oil

  • 1 t cumin

  • 1 t coriander

  • 1 t garam masala

  • 1 t turmeric

  • 1 onion (finely diced)

  • 3 eggs

  • 6 spring onions


Method

  1. Preheat oven to 180ºC / 350 F.

  2. Blend cauliflower in a food processor and tip into a large mixing bowl.

  3. Melt coconut oil and add to cauliflower with spices and mix well.

  4. Tip into a large roasting tray and roast for 1 hour - checking and mixing every 20 mins.

  5. Heat some coconut oil in a large pan or wok.

  6. Add finely diced onion and cook till browned.

  7. Add eggs and scramble for .. mins.

  8. Mix in roasted cauliflower and chopped spring onions.
