Egg fried cauliflower rice

A great low carb alternative to egg fried rice. So easy and delicious.

Ingredients
1 whole cauliflower
1 T coconut oil
1 t cumin
1 t coriander
1 t garam masala
1 t turmeric
1 onion (finely diced)
3 eggs
6 spring onions
Method
Preheat oven to 180ºC / 350 F.
Blend cauliflower in a food processor and tip into a large mixing bowl.
Melt coconut oil and add to cauliflower with spices and mix well.
Tip into a large roasting tray and roast for 1 hour - checking and mixing every 20 mins.
Heat some coconut oil in a large pan or wok.
Add finely diced onion and cook till browned.
Add eggs and scramble for .. mins.
Mix in roasted cauliflower and chopped spring onions.
