Lamb burger, halloumi & herb salad

Just because we are avoiding bread doesn't mean you can't have a great burger. You also won't feel bloated or tired after eating this one and you can taste all the amazing ingredients better without all that extra padding.

Ingredients

  • 400g minced lamb

  • 6 mushrooms (optional)

  • 2 garlic cloves

  • 2 t cumin

  • 1 t Ras el hanout

  • 1 egg

  • salt & pepper

  • halloumi

  • 1 onion

  • 30 g mint leaves / flat leaf parsley / coriander leaves

  • 30 g watercress

  • 2 T olive oil

  • 2 T apple cider vinegar

  • 2 T tahini


Method

  1. Finely chop mushrooms.

  2. In a bowl mix minced lamb with crushed garlic, spices, egg and mushrooms.

  3. Heat a pan with coconut oil.

  4. Fry onion slices on low until caramelised

  5. Form mix into burger shapes and grill on the pan.

  6. Wash watercress and herbs and add to bowls with apple cider vinegar and olive oil dressing.

  7. Turn the burgers once brown on one side.

  8. Fry halloumi slices.

  9. Serve burgers on herb salad, with fried onions, halloumi and tahini.
