Goats cheese & walnut salad

Goats cheese contains healthy fats, protein, vitamins and minerals and a good source of selenium, magnesium and niacin (vitamin B3).
Capric acid in goats cheese (a medium-chain fatty acid) has antibacterial and anti-inflammatory properties and probiotics.
Walnuts are high in omega-3 ALA, magnesium, and amino acid arginine which may decrease inflammation. Walnuts are also great for brain and gut function, feeding beneficial bacteria that produce butyrate.

Ingredients
120g goats cheese
20 g walnuts
40 g salad leaves
60 g artichoke hearts
40 g cherry tomatoes
25 ml vinaigrette
Method
Slice and warm goats cheese in the oven or under the grill for 5-10 mins.
Toast chopped walnuts in the oven for 5-10 mins.
Plate up salad leaves, cherry tomatoes and artichoke hearts.
Top with warmed goats cheese and toasted walnuts.
Drizzle with vinaigrette.
