Goats cheese & walnut salad

Goats cheese contains healthy fats, protein, vitamins and minerals and a good source of selenium, magnesium and niacin (vitamin B3).

Capric acid in goats cheese (a medium-chain fatty acid) has antibacterial and anti-inflammatory properties and probiotics.

Walnuts are high in omega-3 ALA, magnesium, and amino acid arginine which may decrease inflammation. Walnuts are also great for brain and gut function, feeding beneficial bacteria that produce butyrate.

Ingredients

  • 120g goats cheese

  • 20 g walnuts

  • 40 g salad leaves

  • 60 g artichoke hearts

  • 40 g cherry tomatoes

  • 25 ml vinaigrette


Method

  1. Slice and warm goats cheese in the oven or under the grill for 5-10 mins.

  2. Toast chopped walnuts in the oven for 5-10 mins.

  3. Plate up salad leaves, cherry tomatoes and artichoke hearts.

  4. Top with warmed goats cheese and toasted walnuts.

  5. Drizzle with vinaigrette.
