Sweet potato fries

Sweet potatoes are rich in vitamin A, antioxidant beta carotene, vitamin C, potassium, calcium, iron, magnesium, and folate.

They have a medium to high glycemic index so should be eaten in moderation! See how your body responds to starch and make sure your other meals for the day are low carb.

Ingredients

  • 1 sweet potato (200g)

  • 1/2 t salt

  • 1 t nutmeg or paprika (optional)

  • 1 T coconut oil (melted)


Method

  1. Preheat oven to 180ºC / 350 F.

  2. Cut sweet potato into fries with skin on and add to a large mixing bowl.

  3. Melt coconut oil and add salt and spices if using.

  4. Pour over sweet potato and mix till well coated.

  5. Spread on a baking sheet and bake for 40-60 mins, till golden.
