Celeriac chips
Serves - 4
Celeriac makes a great alternative to potato fries.
Celeriac is an excellent source of vitamin K, a good source of fibre, vitamin C, phosphorus, potassium and has a GI of 35 which is pretty low for a root vegetable.

Ingredients
600 g celeriac root
1/2 t salt
1 t nutmeg or smoked paprika (optional)
20 g butter (melted)
Method
Preheat oven to 180ºC / 350 F.
Peel and cut celeriac root into chips or fries.
Melt butter and add salt and spices if using.
In a large bowl, toss in melted butter.
Spread on a baking sheet and bake for 40 mins.
