Celeriac chips

Serves - 4

Celeriac makes a great alternative to potato fries.

Celeriac is an excellent source of vitamin K, a good source of fibre, vitamin C, phosphorus, potassium and has a GI of 35 which is pretty low for a root vegetable.

Ingredients

  • 600 g celeriac root

  • 1/2 t salt

  • 1 t nutmeg or smoked paprika (optional)

  • 20 g butter (melted)


Method

  1. Preheat oven to 180ºC / 350 F.

  2. Peel and cut celeriac root into chips or fries.

  3. Melt butter and add salt and spices if using.

  4. In a large bowl, toss in melted butter.

  5. Spread on a baking sheet and bake for 40 mins.
