Toasted butternut seeds

Serves - 4

Butternut seeds like pumpkin seeds are packed full of nutrients. A good source of protein, nine minerals including calcium and zinc, 13 vitamins and 18 amino acids.

You can cook them in the oven or in a pan. A pan with a lid might be easier as they pop and jump around in the oven.

Ingredients

  • butternut squash seeds

  • 1 T coconut oil

  • sea salt


Method - oven

  1. Preheat oven to 180ºC / 350 F.

  2. Wash seeds to remove any pumpkin strings or flesh.

  3. Mix seeds in coconut oil and spread onto a roasting tray.

  4. Roast for 10 mins.

  5. Keep an eye on them as they pop.

  6. Once roasted cover with sea salt.

Method - pan

  1. Wash seeds to remove any pumpkin strings or flesh.

  2. Melt coconut oil in a pan and add seeds.

  3. Cook with lid off and stir for around 10 mins till they start to brown.

  4. Once they start to pop add a lid - stop cooking when they are nicely toasted.

  5. Once roasted cover with sea salt.
