Courgetti al'arrabiata

Giving this classic pasta dish the low carb treatment.

Super simple and fiery Italian tomato dish. So easy to throw together very quickly, and deliciously satisfying.

You can add other Italian herbs you like, like basil or oregano, or stir through green pesto.

Ingredients

  • 1 onion

  • 1 stick celery

  • 1 t coconut oil

  • 1 garlic cloves

  • 1 t fresh thyme

  • 1 t dried chilli flakes

  • 200 g tinned chopped tomatoes

  • 100ml water

  • 1 t red pesto

  • 1 courgette (200 g)

  • salt & pepper


Method

  1. In a large pan, sweat chopped onion and celery till coloured.

  2. Add garlic and cook for a few minutes.

  3. Add tinned tomatoes, water, pesto, and chilli, picked thyme leaves and simmer for 20 mins.

  4. Wash and spiralise courgettes and add to the pan.

  5. Serve drizzled with olive oil, salt and pepper.
