Ingredients

  • 50ml gin

  • 1 lemon

  • 1 T erythritol

  • 1 egg white

  • ice

  • sprig of thyme

  • 150 ml sparkling mineral water


Method

  1. Using a peeler, slice some lemon peel from lemon for decoration.

  2. Juice lemon.

  3. In a shaker, add gin, lemon juice, erythritol, egg white, sprig of thyme and shake vigourously.

  4. Strain into a coupe glass and top with sparkling water and lemon peel.
