Ingredients
50ml gin
1 lemon
1 T erythritol
1 egg white
ice
sprig of thyme
150 ml sparkling mineral water
Method
Using a peeler, slice some lemon peel from lemon for decoration.
Juice lemon.
In a shaker, add gin, lemon juice, erythritol, egg white, sprig of thyme and shake vigourously.
Strain into a coupe glass and top with sparkling water and lemon peel.
