French onion soup

Serves - 4

French onion soup really does have it all when it come to gut health. Rich in collagen, gelatine, prebiotic soluble fibre inulin and fructo-oligosaccharides, which help boost your immune system, stimulate gut repair and feed good bacteria.

Onions are also a potent anti-inflammatory, due to a high concentration of the antioxidant quercetin.

Ingredients

  • 3 large onions (sliced)

  • 50g butter

  • 1 T avocado oil

  • 1 t pink salt

  • 500ml beef stock

  • 500ml filtered water

  • 150ml white wine


Method

  1. Sweat onions in butter and oil on low for 2 hours, till dark and sticky.

  2. Add the stock, water, wine, salt, and simmer for 30 mins.
