Swede, cocoa & coconut pancakes

Serves - 2 (2 pancakes each serving)

Swede and coconut are both great anti fungal ingredients.

Swede or rutabaga are rich in calcium, magnesium, potassium, and vitamins C and E. They also contain folate, phosphorus and selenium, which is great for bone and reproductive health.

Psyllium is extremely high in soluble fibre and a powerful prebiotic and gut transit stimulant.

Serve with gut healing spiced apple sauce, healthy hazelnut spread or a drizzle of maple syrup (topping not included in nutrition data).

Ingredients

  • 100 g swede

  • 30 g desiccated coconut

  • 2 eggs

  • 2 T oats

  • 1 T psyllium husk

  • 200 ml milk (optional)

  • 1 T cocoa powder

  • 1 t cinnamon

  • 20 g butter (for frying)


Method

  1. Wash, core and grate apple with skin on.

  2. Peel and grate celeriac.

  3. Crack 2 eggs in a bowl.

  4. Add oats, psyllium husk, cinnamon, milk and whisk.

  5. Leave to thicken for 30 mins.

  6. Melt a knob of butter in a pan.

  7. Spoon 2 tablespoons of pancake mix into the pan, and press into a pancake shape - small pancakes are easier to manage.

  8. Once golden around edges, flip pancake and cook the other side.

  9. Serve pancakes with gut healing spiced apple sauce, healthy hazelnut spread or a drizzle of maple syrup .
