Ingredients

  • 2 eggs

  • 20 g butter

  • 60 g smoked salmon

  • 20 g watercress or pea shoots

  • 10 g dill

  • 1 T avocado or olive oil

  • 1/4 lemon

  • pink salt & pepper


Method

  1. Melt knob of butter in a pan, and add and scramble the eggs.

  2. Serve scrambles eggs with 2 slices of smoked salmon.

  3. Add greens drizzled with avocado oil and a wedge of lemon, salt and pepper.
